Due to the low fat content in Piedmontese beef, please remember to reduce the cooking time by 1/3 to 1/2 of what you would grill a commercial steak for. After the steak has reached medium rare, remove it from the heat and allow it to rest about 5 minutes before you eat it. This is the hard part…waiting to eat that beautiful steak!
