Please remember that Piedmontese beef is easily overcooked due to the low fat content. In comparison to commercial beef, it generally cooks in about 1/3 to 1/2 of the time that commercial beef takes to cook, when grilled. Remember to undercook just a bit from where your target internal temperature target is, then remove from the heat source. Allow the meat to rest around 5 minutes to finish cooking. (This is the hard part…waiting to eat that beautiful steak!) Then, enjoy!
